It is an almost automatic expectation: if I choose plant based, I want to know what is inside and recognize every ingredient.
The problem is that building a clean label plant based product that is credible from a sensory standpoint is more complex than consumers imagine.
For those formulating plant-based products, a clean label is not a communication exercise: it is a technical constraint that affects the choice of every single ingredient, from the aromatic profile to the colorant, from the thickener to the preservative.

Why clean label in plant based is more difficult than elsewhere
A beef burger needs very few ingredients: meat, salt, possibly pepper. The list is short by nature.
A plant-based burger starts from pea, soy, or fava bean proteins that on their own have neither the flavor, nor the color, nor the texture of meat.
To achieve this requires aromas, colorants, fibers, emulsifiers, vegetable fats, stabilizers. The list gets longer.
The paradox of clean label plant based is this: the product that consumers choose because it is “plant-based” requires more technical ingredients than the one it aims to replace.
Every added ingredient is one more item on the label. The formulator’s job is to achieve the sensory result with the fewest possible ingredients, and to ensure that those present are recognizable and acceptable to the consumer.
It is not a compromise. It is a design exercise: every ingredient must earn its place on the label by performing a precise and irreplaceable function.

What consumers expect from a clean label
The clean label has no regulatory definition. There is no regulation that establishes what is “clean label” and what is not.
It is a market convention driven by consumer perception: few ingredients, recognizable names, no E numbers, no chemical terms that sound artificial.
In practice, for plant-based producers this translates into unwritten but concrete rules.
Aromas declared as “natural aroma” or “natural aroma of,” compliant with Regulation EU 1334/2008. Colorants of plant origin indicated by the plant name (beetroot extract, paprika, turmeric) rather than by E number. Thickeners and fibers with common names (pea fiber, potato starch) rather than chemical designations.
The critical point is that the perception of “clean” varies between markets and between channels. German retail has different expectations than Italian retail. The organic channel has stricter rules than conventional.

Natural ingredients for plant based: selection criteria
The selection of natural ingredients for a clean label plant-based product follows precise criteria.

Recognizability on the label. The consumer reads “beetroot extract” and understands. They read “E 162” and become suspicious, even though the source from which they derive is exactly the same. The choice between a colorant declared as a plant extract and one declared with an E number is often a communication choice with direct impact on product acceptability.
Stability in the matrix. A natural ingredient that loses color, taste, or functionality during shelf life forces the formulator to overdose or add stabilizers, lengthening the list. The stability of the ingredient in the specific product matrix must be verified before inclusion in the formula, not only after.
Regulatory compliance. Not everything perceived as “natural” by the consumer has a corresponding regulatory recognition. An aroma can be declared “natural” on the label only if compliant with Regulation EU 1334/2008. A plant colorant follows the rules of Regulation EC 1333/2008 on food additives. Declaring non-compliant claims exposes to challenges and recalls.
Ingredient traceability: from supply chain to label
Ingredient traceability is not just a regulatory obligation. In the clean label plant based context, it becomes a commercial argument.
The consumer who chooses a plant-based product wants to know where the proteins come from, how the aromas were obtained, what origin the colorant has. Retailers increasingly request this as a condition for listing.

Synthetic aromas, even if perfectly legal, are excluded from most retail specifications for premium plant-based products.
The challenge is that building complex aromatic profiles such as grilled, smoked, or umami with natural sources only is more difficult and costly. But the market demands it.

Color yield is generally lower and stability more variable, which requires specific tests on the plant matrix and dosages calibrated for the customer’s process.
The regulatory framework of reference
Clean label is not regulated as such, but the ingredients that compose it are. For clean label plant based products, the European reference regulations are Reg. EU 1334/2008 for aromas, Reg. EC 1333/2008 for colorants and additives, and Reg. EU 1169/2011 for consumer information on labeling. The latter is the regulation that establishes how ingredients must be declared on the label, in what order, and with what designation.
An often overlooked aspect: the designation with which an ingredient appears on the label is not at the producer’s discretion. Reg. 1169/2011 provides precise rules on ingredient designation, and in some cases the legal designation does not coincide with what the consumer would perceive as “clean.”
Verifying designation compliance before launching a product is a step that avoids challenges and recalls.
